Groningen spice cake (Groninger Koek)

Groninger koek, a type of ontbijtkoek or breakfast cake, is also served as an afternoon snack with tea or coffee. There are many varieties. Some have ginger, raisins, nuts or chopped candied fruits. The ‘Oudewijvenkoek’ (Old Women’s Cake) has a softer crust and is flavored with anise seed.

Makes: 1 loaf

Ingredients:

  • 2 cups spelt or rye flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 2 ½ tsps speculaas spices
  • ¾ cup light brown sugar
  • ½ cup honey
  • cup water
  • 2 eggs

Preparation:

  • Preheat oven to 350°F, and line a rectangular 9-inch baking pan with baking paper.
  • Put the flour, baking powder and baking soda into a large bowl.
  • Add the spices and brown sugar and mix well.
  • Whisk the honey, water and eggs in a small bowl.
  • Make a well in the center of the dry ingredients. Pour in the wet ingredients and fold until you have a smooth batter.
  • Pour the batter into the baking pan, and bake for 40-45 minutes.
  • Check the cake after about 20 minutes, and cover with foil if the top is getting too dark.
  • Allow the cake to cool on a rack before serving.
